Has March been the longest for you too? Maybe it was because it was Mustache March… shh don’t tell John I said that! 😬🙈 Or, maybe it was going from short February to a full March. And, having to wait for payday until a Monday! Regardless, it’s finally just about April! Like woah. My goal for April is to be as Plant Based and clean as possible! I plan to follow Dr. Furhman’s Eat To Live program. And, kick my sugar habit to the curb!

The Eat to Live Plan is pretty extreme. A goal go 1 lb of cooked veggies, 1 lb of raw veggies, no meat/ dairy (obvi), sugar or processed food, limited grains, but thankfully unlimited fruit. It could be extremely hard to feed my family this way! So, I’m going to stick with the normal dinner plan we usually have: a couple of meatless dinners, a couple quick and easy, and a couple I know my four-year old would eat.

Here’s What’s For Dinner this week at The Ronan’s

I downloaded Eat To Live Daily’s free week meal plan, so that’s where a couple of these dinners came from. We have five plant-based dinners. Two of which I’ll add meat for the boys. And, then Friday we’ll most likely eat out, but I’ll pick up a couple of frozen pizzas, Cauliflower crust for me 💁🏼‍♀️, just in case. Here’s the weekly line up!

Monday: Instant Pot Veggie Thai Noodles

Tuesday: Black Bean Fajitas

Wednesday:  Pasta E Fagioli + hot links & hot dogs

Thursday: Sweet & Spicy Sweet Potatoes with humus + chicken

Friday: Frozen Pizza

Saturday: Taco Soup

Sunday: BLTs w/ avocado

Breakfasts are green smoothies and the occasional oats or chia pudding. I was digging chia pudding sweetened with maple syrup and cinnamon topped with berries this week!

Lunches are going to be hodge-podge salads. Or, raw veggie plates.
